a busy busy weekend, which included some cooking (in a rather petite kitchen with a stove top that only knows one heat...very high & an oven that burns the bottom of everything). that a side, i've been anxious to start bottling again & with the abundance of strawberries at the moment, its the perfect opportunity. plus it's easy.
strawberry jam
2kg strawberries
1 3/4 sugar
juice of 4 lemons
place hulled strawberries in a large pot with lemon juice, simmer for 30-40 minutes. pour in sugar & stir until dissolved. bring to a rapid boil for about 15 minutes & then test for setting. bottle in sterilised jars & enjoy!
